慢消化澱粉對麵粉粉質的影響

混合粉的拉伸曲線測定
準確稱量300g待測樣品,用布拉班德拉伸儀繪出混合粉的拉伸曲線,按GB/T 14615 ―2006記下麵團最大抗延伸阻力、延伸性、拉伸麵積、抗拉伸強度等值。
所使用的2種小麥粉的濕麵筋含量分別是:綠蓮花高筋粉32.1%,美玫低筋粉24.9%。以綠蓮花高筋粉為基礎粉,添加質量分數20%、25%、30%的外源澱粉,其濕麵筋含量分別為26.8%、25.7%、24.7%。hunhefenzhongshimianjinhanliangyumeimeidijinfendeshimianjinhanliangxiangjin,shiyizuosuxingbinggan,qieyumeimeidijinfenjuyoukebixing。daliangshengchanshijianbiaoming,zuosuxingbinggandexiaomaifenweidijinruolifen,shimianjinhanliangzai21%~26%為宜;為使產品具有致密的質構及良好的口感,麵筋含量不能過低。
小麥澱粉和高鏈玉米澱粉的持水性均隨溫度的升高而升高,且小麥澱粉升高顯著,高鏈澱粉的持水性在50℃ 之後有小幅升高;慢man消xiao化hua澱dian粉fen的de持chi水shui性xing幾ji乎hu不bu受shou溫wen度du的de影ying響xiang,此ci複fu合he物wu較jiao穩wen定ding,且qie持chi水shui性xing較jiao另ling兩liang種zhong澱dian粉fen大da。這zhe可ke能neng是shi因yin為wei高gao溫wen下xia澱dian粉fen發fa生sheng了le糊hu化hua。小xiao麥mai澱dian粉fen的de糊hu化hua溫wen度du低di,較jiao易yi糊hu化hua;慢消化澱粉中直鏈澱粉與脂質發生複合使糊化溫度升高,難糊化且溶解性差。

這(zhe)可(ke)能(neng)是(shi)因(yin)為(wei)慢(man)消(xiao)化(hua)澱(dian)粉(fen)本(ben)身(shen)較(jiao)高(gao)的(de)持(chi)水(shui)性(xing)及(ji)蛋(dan)白(bai)質(zhi)含(han)量(liang)的(de)減(jian)少(shao)抑(yi)製(zhi)了(le)麵(mian)團(tuan)的(de)吸(xi)水(shui)速(su)率(lv),使(shi)其(qi)很(hen)難(nan)形(xing)成(cheng)理(li)想(xiang)的(de)麵(mian)筋(jin)網(wang)絡(luo)。此(ci)外(wai),在(zai)慢(man)消(xiao)化(hua)澱(dian)粉(fen)中(zhong)殘(can)留(liu)的(de)脂(zhi)肪(fang)酸(suan)也(ye)很(hen)容(rong)易(yi)和(he)麵(mian)筋(jin)蛋(dan)白(bai)結(jie)合(he),從(cong)而(er)抑(yi)製(zhi)麵(mian)筋(jin)蛋(dan)白(bai)的(de)吸(xi)水(shui),使(shi)得(de)麵(mian)團(tuan)塑(su)性(xing)增(zeng)強(qiang),利(li)於(yu)酥(su)性(xing)餅(bing)幹(gan)的(de)加(jia)工(gong)成(cheng)型(xing)。 麵mian筋jin的de數shu量liang和he質zhi量liang對dui酥su性xing餅bing幹gan的de質zhi量liang起qi關guan鍵jian性xing作zuo用yong,而er麵mian筋jin的de質zhi量liang主zhu要yao由you麵mian團tuan的de粉fen質zhi和he拉la伸shen特te性xing來lai體ti現xian。在zai高gao筋jin粉fen中zhong添tian加jia澱dian粉fen可ke以yi起qi到dao調tiao節jie麵mian筋jin、解決麵筋含量過高、增zeng韌ren增zeng塑su的de作zuo用yong,而er慢man消xiao化hua澱dian粉fen又you兼jian具ju慢man消xiao化hua功gong能neng,與yu傳chuan統tong的de用yong低di筋jin粉fen做zuo酥su性xing餅bing幹gan相xiang比bi較jiao,可ke開kai發fa出chu生sheng產chan功gong能neng性xing特te膳shan酥su性xing餅bing幹gan的de新xin品pin種zhong配pei方fang。中國糧油儀器網 http://www.98fo.cn/
