油脂的3大作用表現概述

【本資訊由中國糧油儀器網提供】 有許多證據表明,麵團中油脂和麵筋形成了一種複合物。這種複合物很難被分開。乙醋能將麵粉中70%的脂類質提取出來,而麵粉被揉成麵團時,隻能提取出不到10%的曲脂質。
一、油脂對焙烤食品保存期的影響
